SALMON FILLET WITH ORANGE BASIL SAUCE
Salmon Fillet Ingredients:
- 1 to 1 1/2 lbs. fresh or frozen salmon fillet
- 1/4 c. frozen orange juice, thawed
- 2 tbsp. snipped basil
- 1 tbsp. snipped mint or tarragon
- 3 tbsp. olive oil
- 2 tbsp. water
- 1 tbsp. Worcestershire
- 2 cloves garlic, minced
- 4 sm. zucchini, cut lengthwise
Thaw fish, if frozen. For sauce, in a bowl, combine concentrate, basil, mint, or tarragon, oil, water, Worcestershire and garlic.
Rinse salmon, brush with sauce. Put in pan with a little oil on bottom. Put on grill; cook at medium for 4-6 minutes or until it flakes. Put zucchini on grill, skin side down, cook 5-6 minutes. Serve zucchini with fish. Serves 6.Enjoy !
